Millet Sweet Vegetable Soup

Back to Absolutely Macro

1 carrot, chopped 
1 stalk celery chopped 
1 small onion, chopped
1/2 small parsnip, chopped
some cubed and peeled winter squash
1 cup millet
salt or sweet white miso
4-6 cups water (depending on thickness you like)



Wash millet and dry roast in a pan over low heat till it smells nutty. Add millet and vegetables to water with a pinch of salt, bring to a boil, cover and simmer for 30 minutes.  Add more salt to taste.
